La Gitane Traditional Chai

This recipe follows the traditional infusion method that was passed down to us. A slow, gentle simmer allows the plants and spices to release their full depth, creating a chai that is rich, enveloping and intensely aromatic. It is a preparation that requires a little time, but reveals the full complexity of La Gitane.

Ingredients
1 tsp La Gitane herbal tea
½ cup water
½ cup milk, dairy or plant-based
2 tsp sugar or maple syrup
Preparation
Place all ingredients in a small saucepan.
Heat over very low heat for 20 to 30 minutes, without bringing to a boil.
Strain and serve hot.
